Defects can be isolated only in certain areas of a chip. On AMD CPU chiplets, a chiplet is organized into two 4 core blocks. Only one CPU of each block can be deactivated else an unbalanced CPU will not perform to spec(one of the tech magazines did an article on this). Shared items are mostly separated to the I/O chiplet made with a more reliable older process running at a slower less demanding clock speed. On Intel chips, a defect in a single CPU or CPU specific cache can be isolated but a defect in shared level 3 cache, voltage regulator, shared I/O components etc is fatal to the whole chip. Intel is working on its own equivalent to infinity fabric as it realizes the superiority of the chiplet approach. Given its large monopolist habits, the changeover wasn't a priority.
The benefit of chiplets becomes greatly magnified in the case of very large number of core CPUs like Threadripper and Epyc since creating a huge monolithic chip greatly amplifies defect losses.
