250,000,000 - 30Early estimates indicated approximately 250 million doves migrating through the SE when the dove hunting season opened Sep 1st on Tuesday down in Coleman, Texas. The estimates were ridiculously low. I have never seen so many doves in my life. Even the cataract afflicted Chip$ter bagged his limit of 15 birds in less than 2 hrs each day. ( Don't ask me how many shells were required!) 30 came home with me to NC and became appetizers for a nice picnic dinner tonight. If you like wild dove try this simple recipe: Clean the bird and save only the breast. Filet the breast meat off the breast bone. Insert a small piece of onion and piece of pepper between the two small filets. Wrap the filet "sandwich" with bacon and secure w 2 toothpicks. Coat the result w a small amount of Panko bread crumbs and grated cheese. Grill the treat until the bacon just starts to firm. Texans like to use Jalapeno's in the recipe but heartburn runs in my family so I only use the mild green variety of pepper. Ice cold beer enhances the experience. The more beers, the harder the shots and the longer the distance required to fell the wily, erratic flying dove. Hell, even the game warden, who dutifully checked my license, gun and bag limit, was impressed that I had traveled all the way to TX from NC to harvest the birds. Happy Labor Day weekend!! Chip$ter |
